Jo's Chicken Packets

Individual Chicken Packets are simple to assemble, versatile in ingredients, possess genuine nutrition, and contain an entire meal - no extra side dishes necessary, though I do serve rolls with this meal occassionally. 

Here are the ingredients & the process for how I make Chicken Packets:

Ingredients (per packet)
  1 chicken breast
  1 potato, cubed
  small handfull of chopped carrots
  small handfull of green beans (broccoli or other green veggie)
  2 -3 Tbsp Italian dressing

1. Place one chicken breast in the center of an 18-inch long sheet of aluminum foil.

2. Top with one cubed potato.

3. Add carrots (or vegetable of choice)

4. Followed by a green vegetable.

5. Drizzle with Italian dressing (or gravy or creamed soup).

6. Close and seal the foil around the Italian drizzled chicken and veggies.


7.  Place packet on cookie sheet/baking dish.

8. Put packets in a 375 degree oven for 1 - 1.5 hours (or cook on a grill, which I haven't tried or in a crockpot on low all day).

9. Caution: will be hot!  Open foil packet and empty contents onto a plate.
10. Enjoy time with your family, because clean-up is a snap with this meal! :)
