Fool Proof Ciabatta Bread

Italian Style Ciabatta Bread
One of my favorite aromas in the world is the smell of freshly baked bread.  The difficulty I have with achieving that smell is the amount of time and effort needed to complete the whole bread-making process.  I have found a recipe that takes the effort out of baking bread.  However, the dough has to set for 8-12 hours, so the time factor is still critical.  This recipe takes only a minute to mix together, and does not require any tending to, or kneading.  Just mix, let rise for 8-12 hours, place in the desired baking dish, add whatever flavoring you wish, and bake.  The following are some variations I have tried with this recipe:
  • Dinner Rolls - spoon the dough into muffin tins
  • Italian - sprinkle garlic, Italian seasoning, and cheese on top
  • Breakfast - sprinkle cinnamon and sugar in pan and on top of dough
  • Pizza - place half a spoonful of dough into a muffin tin, add sauce and desired toppings, place another half spoonful of dough on top

4 c. all-purpose flour
2 c. warm water
1 tsp. salt
1/4 tsp. granulated yeast


Freshly Baked Italian Ciabatta
 1. Mix water and yeast.
2. Add flour and salt
3. Stir into a heavy batter with a spoon or fork.
4. Cover dough with a hand towel or plastic wrap and set in a safe place for 8-12 hours.  Dough should double in size.  (Hint: If you are in a hurry, you can add a bit of sugar when mixing the dough, and the rise time will be shorter).
5. Preheat oven to 400* F
6. Grease a loaf pan or muffin tin and add the dough.
7. Add desired toppings.
8. Bake for approximately 25 minutes or until golden brown.
9. Let cool for 10 minutes.
